Grilled Chicken with Sauteed Mushrooms & Onions Salad (AKA "Man Salad") Recipe

We've been trying to eat salads on the regular at Casa de Elle Beau. But you know how easy it is to run out of salad recipes. One night I got a little creative and put together what I lovingly call "Man Salad". It turned out to a chart topper. Mr. T asked me to make sure I remembered what I did so that it could be repeated. If your man whines or throws a temper tantrum when you try to feed him a salad for dinner, give this one a shot. There's a chance he just might like it!

Man Salad Recipe
Ingredients
Romaine or mixed greens
Grape tomatoes or chopped tomatoes
Clean and chop lettuce and add tomato to large salad bowl


1/2 10 oz container of white or baby bella mushrooms
1 small onion, sliced
1/2 cup frozen and diced hash browns (optional)
Sauté mushrooms and onions. Add potatoes if using as mushroom and onions start to soften. Season with salt and pepper. I always use Goya Light Seasoning Salt.


Grilled chicken
Note: On busy weeknights I just use the frozen mesquite chicken breasts we buy from Sam's Club and just pop them in the oven according to the directions. You can use any type of grilled chicken you like or use could use the meat from a rotisserie chicken as well.


Diced Alpine Lace Swiss cheese
Crispy onions


Dressing:
1 tbsp dijon mustard
1 clove minced garlic
1 tbsp lemon juice (you can omit if you don't have it)
1/8 cup apple cider vinegar
1/4 cup olive oil
Mix all ingredients except the oil. Slowly stream in oil. I generally put the dressing in a jar so that I can shake it up when it's ready to use.


Toss lettuce and tomatoes with dressing. Put on plates and top with chicken, mushroom and onion mixture, swiss cheese and crispy onions. Drizzle a little more dressing over the top if desired.
