Easy Lentil Soup Recipe


The weather is absolutely dreadful around here. My dog is in the corner shivering as I type this. We went for a walk in the pouring rain and we're all drenched. But there's nothing like a hot bowl of soup on a cold and rainy day. This vegetarian lentil soup will warm your belly and your soul.
Easy Lentil Soup Recipe
2 handful baby carrots
1 onion
3 gloves garlic
3 green onions
Cooking spray such as Pam
1/3 cup pureed fresh tomato or canned tomato paste
4 vegetable bouillon cubes
12 cups water
1 lb bag lentils
1/2 packet sazon seasoning
2-3 potatoes
4 dashes of Tabasco
several sprinkles of Trader Joe's 21 seasoning salute
Goya Light salt
pepper


Chop carrots, onion, garlic and green onion in food processor. Saute in a large stockpot with cooking spray until onions are translucent, about 7 minutes. Add tomato puree or paste and stir. Add water and bouillon cubes. Rinse lentils well in a strainer. Add to stockpot. Cook until liquid reduces and lentils are soft. Add potatoes cook until potatoes are tender. Add Tabasco, 21 seasoning salute, salt and pepper to taste.
