Hearty Breakfast Under 300 Calories - Scrambled Eggs with Cheddar & Chives Recipe

This is a simple and hearty, yet delicious and low-cal, breakfast. Recently I've been trying to make easy low calorie meals that still taste great.  This one is inspired by my one of my favorite childhood breakfasts. I've just omitted the butter, cream and full-fat cheese.
This is now one our favorites at Casa De Elle Beau.  Mr. T isn't generally big on scrambled egg whites but he gladly eats these. So you might be able to sneak it past your guy too!

I typically eat these eggs with reduced sodium turkey bacon and a slice of grilled rye toast and it comes in at only 275 calories. For Mr. T, I'll typically grill up a ciabatta roll brushed with some margarine.


Scrambled Egg(white)s with Cheddar & Chives Recipe
Serves 2

6 egg whites
8-10 fresh chives
2 oz shredded reduced fat sharp cheddar (I like Cabot brand)
Goya Adobo Light salt
Fresh black pepper

Heat a large non-stick pan over medium heat. Add egg whites, chives, salt and pepper to a bowl and whisk until beaten.  Add a little butter the pan if you like. Add egg white mixture. Immediately  sprinkle the shredded cheddar over the top of the egg white. Stir gently so that the eggs and cheese begin to blend. You may need to cook these eggs slightly longer than normal to cook out some of the excess liquid form the cheese. When cooked to your liking serve with with turkey bacon and grilled bread.
