Easy Healthy Dinner Recipe

There are times when I simply don't want to cook. When I've had a long day it gets to the point that I'd rather eat a cookie and some chips and crawl into bed because I'm bone tired. It's just not a healthy choice. To make life easier, I've come up with some fast, easy, healthy meals that I can cook on a week night. This is one of them.
The menu includes hot Italian turkey sausages with peppers and onions, sweet potato fries and grilled zucchini.

Here's the game plan for a super easy, healthy dinner recipe:


Preheat the oven to 450 degrees for the sweet potato fries. Spray a baking sheet with Pam. Dump on enough fries and throw them in the oven. Cook for about 20-25 minutes until crisp. Here's the brand I use:

In a non-stick frying pan dump in the turkey sausages and cook over medium high heat. Keep turning so each side gets brown. Here's the brand I use:
Meanwhile, slice half an onion and spray a pan with Pam. Saute onions over medium high heat until they cook down a bit. Now add frozen peppers strips and cook down. You could use a mix with onions but I find fresh onion is so much better than frozen and it only take a second more to slice. Frozen peppers are more than acceptable in flavor. Here's what I use:
Now take the zucchini and wash it. Cut them in half and slice down the side - the long way. Take the slices and line them up on a cold grill pan. Spray with Pam, then sprinkle salt and pepper. Now flip over the slices and spray and sprinkle again. Now turn the heat on to medium high and cook on both sides. Easiest way to cook grilled veggies and you don't mess up any extra plates to prepare the veggies. Guess what? You're done! Assemble, serve and enjoy.
