Mozzerella, tomato, arugula, figs & pine nuts salad

I had a similar salad at a restaurant while I was traveling on business and I loved the simplicity of the flavors melding together. What could go wrong when you've got a few figs, some mozzarella and a sprinkle of pine nuts. Divine!

Give this recipe a shot when you are in a salad rut. It only needs to be dressed with balsamic vinegar and olive oil. I find that adding a bit of Kosher salt to a salad gives it that restaurant flavor.

Baby arugula
Fresh mozzarella
Toasted pine nuts
Balsamic vinegar
Extra virgin olive oil
Salt and pepper

Toss baby arugula, pine nuts and figs with vinegar and oil. You want three parts oil to one part vinegar for the best balance. Top salad with tomato and mozzarella and drizzle with pesto. Top with Kosher salt and fresh pepper.
