Copacabana Shake (Bananas & Pineapple & Coconut, oh my.)


I heard that old song Copacabana the other day and I've also been dreaming of a warm island with sandy beaches. I adore coconut but I don't need the extra calories these days. So I created this creamy shake with a little coconut extract. The bananas provide plenty of creaminess that coconut usually adds.

Southwest Chicken Burger Recipe

Remember when you were little and your mom made you a "mom" burger on regular wheat bread with no fixings? It just never quite lived up to McDonald's and you wished she's taken you to the golden arches. Well, this burger beats any I've had eating out - fast-food or otherwise.  If you want a burger with a little pizzaz, this is THAT burger. I mentioned that I've been on a Southwest kick lately and I meant it. This is one of my go-to recipes when we're in the mood for burgers with a little oomph. Mr. T doesn't eat beef so I usually make these with ground chicken or turkey.

I've been craving Southwest flavors lately. I guess it's the winter doldrums that leaves me with a need for "bright" food that my eyes and mouth can feast on. I made this concoction up since I wanted a nice hearty soup while trying to fit my hearty bottom into my pants. If you're vegan you could omit the chicken and use fakin' bacon with great results. I have to big-up Mr. T for help me perfect the seasoning and balance of the soup. It's darn delicious if I do say so myself!

Food for the Face (Avocado Mask and More)

I'm visiting the UK this week and I went to one of my favorite stores, Lush Cosmetics. If you haven't heard of them, they make fresh and natural cosmetics. Their products are terrific. They have stores in the US but I generally buy things when I'm here since it's cheaper - even with that gruesome exchange rate. I found some terrific gifts today.

Try it when you don't feel like cooking. So you're a big ole cranky pants after a long day of work and you might scream if you have to face your stove.
