Hearty Breakfast Under 300 Calories - Scrambled Eggs with Cheddar & Chives Recipe

This is a simple and hearty, yet delicious and low-cal, breakfast. Recently I've been trying to make easy low calorie meals that still taste great.  This one is inspired by my one of my favorite childhood breakfasts. I've just omitted the butter, cream and full-fat cheese.

I'm trying so very hard to lose weight. It's really slow going and the pounds seem to be refusing to come off. I think I might have the slowest metabolism on Earth. So I haven't been posting much on the blog since the meals are pretty uninspired.

Grilled Fish Taco Recipe

I adore fish tacos. I think most people do too, once they try them. They are the perfect summer meal. Light and refreshing, yet still satisfying. Sometimes I make my lazy version of fish tacos with frozen breaded fish.

Gluten Free Vegetable Fried Rice Recipe

Recently, Mr. T wasn't feeling well. When he finally felt like he could eat some real food, he requested veggie fried rice. I was dubious at first. Asian foods aren't in my comfort zone and I don't even own a wok anymore. But after watching a few You Tube videos I felt up the the task. Surprisingly, this dish is really easy to make. Mozzerella, tomato, arugula, figs & pine nuts salad

I had a similar salad at a restaurant while I was traveling on business and I loved the simplicity of the flavors melding together. What could go wrong when you've got a few figs, some mozzarella and a sprinkle of pine nuts. Divine!

Give this recipe a shot when you are in a salad rut. It only needs to be dressed with balsamic vinegar and olive oil. I find that adding a bit of Kosher salt to a salad gives it that restaurant flavor.

Healthy Fish Taco Recipe - Baja Style

If you've ever had a fish taco you know how delicious they are. But Baja style means deep fried - delicious but not very figure friendly. I love 'em but I just don't eat fried food on regular basis. So this is my Baja fish taco hack. I use a baked and breaded frozen fish to make these healthier.
The other benefit is that using a prepared fish makes this dish incredibly easy and I'll take any time-saver I can get these days.

Chicken Provençal Recipe


We love chicken in our house. Mr. T is basically a chick-a-tarian now. He rarely eats fish and never eats beef and pork. I found this recipe in Gourmet and have perfected it to suit our tastes. It's a lovely meal with a simple salad and a nice glass of wine. It's one of Mr. T's favorite meals and he asks for it quite often. It's great for company too since it looks and tastes gourmet but it's quite simple to prepare.  Tres Bon!

Southwest Chicken Burger Recipe

Remember when you were little and your mom made you a "mom" burger on regular wheat bread with no fixings? It just never quite lived up to McDonald's and you wished she's taken you to the golden arches. Well, this burger beats any I've had eating out - fast-food or otherwise.  If you want a burger with a little pizzaz, this is THAT burger. I mentioned that I've been on a Southwest kick lately and I meant it. This is one of my go-to recipes when we're in the mood for burgers with a little oomph. Mr. T doesn't eat beef so I usually make these with ground chicken or turkey.
