Southwest Chicken Burger Recipe

Remember when you were little and your mom made you a "mom" burger on regular wheat bread with no fixings? It just never quite lived up to McDonald's and you wished she's taken you to the golden arches. Well, this burger beats any I've had eating out - fast-food or otherwise.  If you want a burger with a little pizzaz, this is THAT burger. I mentioned that I've been on a Southwest kick lately and I meant it. This is one of my go-to recipes when we're in the mood for burgers with a little oomph. Mr. T doesn't eat beef so I usually make these with ground chicken or turkey.


Southwest Chicken Burger Recipe
Ingredients
1 lb. ground chicken or patties
1 tbs taco seasoning
1 big pinch cumin
1 tbs. garlic powder
2 big pinches oregano

1 onion sauteed in a little olive oil


1 avocado, smashed
2 tbs. chopped cilantro
2-3 squeezes lime

1 tbs. light mayo
1 tbs. chipotle sauce (or less if you prefer less spice)

Shredded lettuce
Sliced tomato
Tortilla strips
4 potato or onion rolls
Optional: cheese (pepper jack, cheddar, queso fresco are all good options) Saute onions. Season ground chicken with taco season, cumin, garlic powder and oregano.Put burgers on a grill pan over medium high heat.While burgers are cooking spread chipotle mayo and avocado mix on buns. Add tomatoes and onions. Melt cheese over burger if desired. Put the burgers on the buns and top with lettuce and tortilla strips.
